Defaix’s village Chablis is drawn from four parcels of mature, 30-plus-year-old vines situated around Milly and Poinchy on the left bank of the Serein River. The wine ferments spontaneously and ages on fine lees for 10 months in glass-lined tanks. Compared to the wine above, the older vines translate to more character, depth and classical restraint—not to mention supersized minerality and ozone salinity. It’s a ripe, poised and vibrantly fresh Chablis with juicy nectarine, mixed citrus fruit and stony, pithy freshness running the length of the palate. Piuze’s Chablis La Grande Vallée offers aromas of pear, oyster shell, lemon oil and spring flowers. On the palate, it is medium- to full-bodied, taut and incisive, with a pure and crisp core of fruit and an energetic profile, marked by plenty of classically Chablisien marine notes on its long finish. The vineyard is located on the left bank of the Serein river, below the Montmains premier cru, right below Les Forêts on a 1.8 hectare parcel (4.4 acres) within the original historic AOC Chablis boundaries. Patrick only sources wine from the original 12th century Chablis boundaries, which means that all his cuvees hail from the celebrated Kimmeridgian limestone—a unique terroir rich in fossils, prized for creating stony, complex Chardonnays.$50.00

Domaine Marsoif Petit Chablis / Sur La Goulerotte - 750ml, 2024
100% unoaked Chardonnay from the eastern edge of Chablis where Tonnerre and Epineuil come together, Marsoif is currently run by Raphael Masson, who took over in 2005. The property itself however, dates back to the 12th century and the Knights Templar. This wine shows nice high tones with minerality and salinity that's more like traditional Chablis. The nose is engaging with notes of apple, quince, and peach alongside floral touches of honeysuckle, hawthorn, and jasmine. On the palate, this Petit Chablis really shines with fruity and floral notes and a touch of lemon which gives it a vibrant and edgy side.$35.00
