The Barolo Riserva Vignolo is the most refined and velvety expression within the Cavallotto portfolio. Located in Castiglione Falletto, this MGA (Cru) is renowned for producing wines of commanding structure characterized by a tannic sweetness that makes them surprisingly approachable even in their youth. The winemaking philosophy is strictly traditional: fermentation with indigenous yeasts, very long submerged-cap macerations (up to 38 days), and a monumental aging period of 4 to 5 years in Slavonian oak casks.
