The 2025 Grauburgunder Ingelheim comes with just a tinge of pink in its pale coppery color. A portion of this had some skin contact, another portion was whole-bunch-pressed and fermented in large wood. The nose is all subtle yeast with the merest touch of florality, very tender but also very charming. A well of freshness, a flowing, juicy generosity, seemingly emanating from a wonderful, central, almost zesty core around which a delicious veil of phenolics gathers. 100% Pinot Noir from mixed German clones grown about 5km south of the Rhein on a mix of limestone and clay. Deeply saturated color with a glorious nose of cherry fruit and light notes of pekoe and dark berries. The finishing tannins are prevalent now but promise an incredible evolution. This is village-level Pinot at a VERY high level

Simone Adams, who holds a doctorate in wine science, knows what she's doing, and it shows. This Pinot Blanc is vinified in a mix of large oak barrels and stainless steel tanks. It undergoes spontaneous fermentation, then rests for a year on the lees until it is microbiologically stable the following autumn, at which point it is bottled unfined and unfiltered. The nose is initially delicate, with aromas of lemon balm, apricot, pear, peach, and light bread. Slightly smoky, the palate reveals the extended lees aging: exceptionally harmonious, finely creamy with a charming smoothness and a richness almost reminiscent of a Pinot Gris, with a long, lingering finish. Could this be the ultimate autumn white wine?
