With notes of white flowers and fleshy white fruit coming from the bit of Moscato here, and a tense minerality and acidity coming from the Fiano, this hazy sparkling wine might appear a bit wild and untamed in the bottle, but it has table manners too, and there's a real refinement to the winemaking. Subtle apricot blossom and white peach aromatics are met with flintystony notes on a light palate, with very light effervescence, finishing bone dry.
