Balsamela is the result of direct firecooking of organic apple juice and apple vinegar much like the cooking down of grape must in traditional balsamico. This syrupy apple vinegar is great drizzled like balsamic over fresh ricotta and goat cheeses panna cotta fruits or even as an agrodolce accompaniment to seasonal vegetables.
