Les Brebis is a small, family owned winery specializing in Pinot Noir from Oregon’s Eola-Amity Hills.
In addition to their Pinot Noir they occasionally make a white wine. In 2017 they produced a limited amount of Sauvignon Blanc. It was fermented entirely in stainless steel. They bottled it soon after fermentation was complete to capture its beautiful fruit and minerality. Rather than aiming for complexity, like they do with their Pinot Noir, their goal with this wine was to emphasize the variety. Expect in-your-face Sauvignon blanc: gooseberries, pear, kiwi fruit, lemongrass, and a hint of lime. There is plenty of acidity to keep it refreshing and help it pair with your favorite summer dishes. Only 44 cases produced.
They source sustainably grown grapes from some of the best vineyards in this region. They don’t add fining agents to their wines and most often they bottle them unfiltered. The resulting wines are both textured and elegant. They are complex wines that express the unique place where the grapes were grown.
