Ashbrook is the newest award- winning cheese coming out of Springbrook’s cheese house. This is their ode to French Morbier. This cheese is made from fresh raw Jersey cow’s milk and exhibits a distinctive layer of vegetable ash running thru the center of the paste. It’s semi-soft in texture and washed in a salt bath as it ages. Its taste profile is mildly funky on the rind (think Tallegio) and lactic, sweet, and buttery on the inside.
