Previously made at shop favorite producer Old Chatham Creamery, Lively Run Goat Dairy took over making this cheese in 2025. When young, the paste has a delicate spongey texture; it breaks down into a beautiful elastic paste that oozes when cut. A density and slight earthiness develops with age. It presents a slight tang on the tongue that mellows into a umami finish, perfect for those that love the texture of brie and the flavor and benefits of goat's milk cheeses.
