Francois Chidaine is a long-time proponent and pioneer of biodynamic winemaking in the Loire Valley and his Chenin Blancs are considered some of the finest available. This Chenin is produced as a sparkler using the traditional (Champenoise) method, which imparts remarkable complexity and structure to the wine. On the nose, this presents aromas of ripe white fruits, particularly pear and apple, with subtle floral notes and a touch of brioche. On the palate, the acidity is perfectly balanced by a creamy and persistent mousse, leading to a long and pleasantly mineral finish.
